A Croatian product for Croatian tourism powered by HGK

We would also like to use this opportunity to announce the initiative aimed at starting the “Croatian Food Day” that would be developed by next year and held on the first day of the festival. The idea is to promote the exclusive use of domestic groceries and the preparation of traditional Croatian dishes with or without a twist among caterers for one day a year.

Wine in Croatia - 25 years later powered by HGK
Small family wineries from different wine regions of Croatia have won prestigious international awards thanks to different philosophies and approaches. Almost a quarter of a century later, they will share their experiences about the demanding road to success paved with droplets of gold. Why is Tomac in favour of biodynamics and all-natural wines, why does Miloš keep his wines longer and why does Benvenuti prefer autochthonous varieties? Renowned wine writer Saša Špiranec will discuss these questions as well as the philosophies these winemakers pride themselves on. Hard work throughout the year, whose results depend on factors that cannot be much affected, such as time, legislation, and the whimsical and cruel market, is enough to persuade people to avoid this occupation rather than attract them. This is what makes their success all the more significant.
Sudionici: Ivan Miloš (Vinarija Miloš), Tomislav Tomac (Vinarija Tomac), Nikola Benvenuti (Vinarija Benvenuti), Božica Marković (HGK)

While countries around the world bring in more tourists every year by introducing them to their traditional dishes via street food, Croatia is still running round in circles with triangles of low-quality pizza and countless kebab-joints. Is it possible to create Croatian street food with our traditional dishes, and why are we still not aware of the bounty of options our tradition is throwing at us? For the price of our awareness and, what can it develop to? And why aren't our cities filled with stands selling our traditional soparnik or fried papaline? Our panel of some of the biggest names of Croatian gastronomy will try and find the answer to this enigma!
Sudionici: Luka Jureško (Submarine), Ivan Zidar (Mason Burgers), Marin Medak (Rougemarin), Katarina Hauer (Kuhna na Ulci)

Modern Croatian cuisine
The recently published ''Croatian Cookbook'' raised a lot of questions when it comes to Croatian gastronomy. For one, is there such a thing, as Croatian gastronomy. Can our cuisine carry the name? Where did it come from and how deep to the roots go? What is the potential for this mix of Mediterranean and continental, and can we consider the dishes we grew up eating ''Croatian'', even though they appear in other cultures? On how we have to become aware of what we have in order to be accepted, and become appreciated, hear from our distinguished panel of chefs!

''SERIOUS SWEET TALK''
Pastries, cakes and patisseries in Croatia have never been sweeter! It is now a well-known fact that pastry-making is not the same as cooking, and that these two forms of gustatory art should be looked at separate crafts. We still may not have to offer as much as Italy or France, but there is a growing number of young, educated enthusiasts that are taking the Croatian pastry-scene by storm! Still, not everything is as fluffy as cotton-candy... What are the difficulties they meet in their work, what keeps them motivated and where do they find the inspiration for their creations? Find out from the names that define Croatian pastries - and the sweetest food writer out there - Vana Babić!

Shaken not stirred by HEP
One of the hottest topics in Croatian tourism at the moment is the realisation of new market-driven ideas. Some ideas are good ideas only in the beginning, but sometimes their realisation at cocktail bars or hotel systems is one massive black hole.
Marijan Maksan will share his experience when it comes to setting up a bar from scratch. The same details are present in the hotel system but vary in dimension and form. Enter Darko Uremović who spent more than a decade setting up hotel bars and now runs a bar with more than 400 alcoholic labels - which just so happen to be our topic. How did they get there and how well do they sell? We will also welcome Roman Rabik - one creative Croatian fellow who has devoted his life both to cocktails and environmental protection. He will elaborate on the topic with environmental aspects of large and small bars within those systems.

The water that springs from protected underground reservoirs are unique in their composition that
bears the characteristics of the soil through which it has passed. Minerals give the water its specific nutritional significance and impact on our health. How to build a gastro-strategy?
Over the last several years, gastronomy has developed into a very attractive part of the tourist offer. Although culinary tourism is characterised as an emerging industry, many countries have started to actively brand its tourist destinations.
Together with a growing interest for food in the media and tourism, the image of a destination is more and more focused on quality culinary offer with an emphasis on local ingredients, and a unique and creative approach regardless of whether it is traditional or fine dining cuisine.
The Scandinavian New Nordic Cuisine project has been a massive success, urging many other countries such as Peru, Thailand, India, Spain, etc. to implement similar concepts. Those countries are now home to the best restaurants in the world and are recording an exceptional increase in the number of tourists precisely because of food.
Close cooperation between the competent ministries with expert teams that would bring key producers, chefs and the visionaries of the culinary world together with the support from the media and planned systematic development of national gastronomy could soon make Croatia a significant and popular culinary destination.

Pump up the volume, pump up the visit
Why is the everyday musical background as important as it is? Can music actually make us order another round of drinks, or make us linger longer over dinner? Of course, it can! But did you ever ask yourself, if music can bring down your business? Alas, it can, if you don't pay attention. The question is not whether to have sound or silence – but what sound it should be. Many of the bars and restaurants don't think twice when it comes to the music that's playing, and the unbreakable bond between music and food. But it is one of the crucial factors of creating the vibe of a place, next to the service offered and the interior design.
Sound is the first information the brain receives in an unknown surrounding, and we all know the importance of a good first impression. On how important music really is, and how it can be used to your advantage, find out from some of the best experts in the field, all under the strict supervision of a man who can, at the same time, critic your music, as well as your food.
